“The Gingered Pear” Smoothie (This is one of my Faves!)
1 or 2 ripe pears (depending on how sweet you like it
1/2 lemon (seeds and rind removed. Or if lemon is organic leave a bit of the peel for zest!)
1 inch nub or “nickle” of ginger
BIG handful of kale, chard or spinach (stems removed)
Shake of Cinnamon
Blend all and enjoy. This is SO refreshing, spicy-sweet and yummy..give it a try!
“The Strawberry Popeye” Smoothie
1 cup of strawberries (ripe or frozen)
2 medium bananas
3 Big handfuls of spinach
Blend all (can add a bit of ice if using fresh strawberries) and revel in deliciousness. Easy as “1, 2, 3!” Serves 2.
“The Kaleberry” Smoothie
1 cup blueberries (frozen or fresh)
1 ripe fuji apple, pear or mango
5 leaves of kale (remove the “spine” unless you enjoy its bitterness)
Juice of one lime
1 stalk celery
1 cup filtered water
Chop and blend all then enjoy this surprisingly tasty treat!
“Peachy Green” Smoothie
1 large ripe peach or nectarine
1 cup of strawberries-(fresh or defrosted frozen)
1/4 cup fresh lemon juice
1 big handful of baby romaine greens
Chop peach and romaine, blend, then add strawberries and lemon, and blend a bit more.
Sweet, nutritious and energizing!
“Savory Creamy Tomato Soup!”
3-5 ripe plum tomatoes or pint of cherry tomatoes
1/2 cup sundried tomatoes
1 ripe Hass avocado
1/2 red bell pepper
2-3 large handfuls of spinach
3-4 sprigs of basil
5-6 pitted black olives
Dash of cayenne pepper
Blend all except the olives, bell pepper, and 2 tomatoes. Start with the tomatoes, add in the avocado, spinach and then basil in that order. You will have a rich, creamy veggie soup at this stage. Next, chop and add the olives, 2 tomatoes, bell pepper, and if needed, more cayenne and perhaps a pinch of sea salt to flavor.
This is a very hearty, satisfying, savory soup, and no cooking required!
Also experiment with adding other veggies or herbs in – perhaps a smidge of green scallion, dill or coriander to taste. Try some toasted nori seaweed for a sublime, super easy and nutritious meal on the go!
